PIKE WITH CREAM SAUCE


Hi friends,
It is something to go for fishing with the best equipment but after, we have to eat the fishs and I recommand some of the best fish receipes that I will write on the blog for you, once a month !!!

Pike with cream

(For four people)



1 nice pike of 1.5 kg,

80 g butter

2 shallots,

parsley, chervil,

2 lemons

salt

1 jar 20 cl cream

250 g fresh mushrooms.

Remove scales and wash the pike.

With a sharp knife, make 4 cuts diagonally across the fish's back.

Pour in the lemon juice and let stand for one hour.

Chop parsley, chervil, shallots.

Knead with half the butter and a little salt.

Salt inside the pike.

Fill the indentations with the back of the herb butter.

Place in a baking dish. Put in hot oven.

During cooking, add a little butter and salt over the fish.

Baste frequently with pan juices to prevent drying.

After 35 minutes cooking, add mushrooms, washed, sliced and revenues in the remaining butter and cream.

Leave for another 5 minutes, basting.

Serve hot, decorated with two lemons cut nicely.

 Atlantic salmon, fished on 115 of Québec’s most extraordinary rivers, is an extremely precious resource, protected and controlled to ensure its survival. It is primarily found along the maritime shore of the St. Lawrence, in the fluvial corridor of the Saguenay and the tributaries of these two majestic rivers. These crystal-clear, gushing rivers are managed by organizations or businesses (such as outfitters) with exclusive rights, by five wildlife reserves boasting 500 km (310 mi.) of salmon rivers and by 19 ZECs (controlled harvesting zones) covering 1,300 km (810 mi.).

 Salmon fishing requires a special permit and is only practised during specific periods. A salmon fishing trip in Québec is an ideal opportunity to introduce the whole family to this sport. Experienced trainers and attractive packages that include equipment and fishing rights ensure a great time for young and old alike. You can also visit several migratory routes and interpretation centres that will introduce you to the incredible life of this long-distance traveller.
